Pouteria sapota, tree of the tropical areas from the family of Sapotaceae, gives an orange, with pumpkin savour, fruit known under the name of sapote or mamey in Mexico. Cultivated since hundreds of years by the local tribes, a butter is obtained by first cold press starting from its core rich in oil (45 - 60%).
